Like other dark leafy greens, bok choy contains essential antioxidants and nutrients such as Vitamin C, Vitamin E, and fiber. However, eating greens does not need to be a chore. This bok choy recipe is so simple, yet so tasty!
What makes it so tasty you ask?
One of the key ingredients of today’s recipe is soybean paste. Not only does soybean paste add an irresistible umami flavor, it’s also packed full of health benefits. It contains an abundance of Vitamin A and C, aids with digestion, and is a great source of protein. For a nice kick of flavor, use soybean paste in your soups and stews, or to make dipping sauces for your veggies!

Here are some essentials you’ll want to have on hand when you’re making Korean side dishes at home:

For this recipe you’ll need:
- ½ pound of bok choy
- 1 teaspoon of salt
- 1 tablespoon soybean paste
- 1 teaspoon gochujang
- 1 teaspoon sesame oil
- ⅓ teaspoon sugar
- 1 clove minced garlic (use more to taste)
- 1 green onion
- Roasted sesame seeds (as garnish)
Now let’s make the Korean bok choy side dish for one:
To cook the bok choy:
- Chop off the butts of the bok choy

2. Bring a pot of water to a boil and add 1 teaspoon of salt
3. Blanch the bok choy for 1-2 minutes in the boiling water.

4. Take the bok choy out and wash with cold water/ submerge in cold water

5. Take the bok choy out of the cold water and squeeze out the excess water
For the sauce:
6. Mix the following ingredients:
- 1 tablespoon soybean paste
- 1 teaspoon gochujang
- 1 teaspoon sesame oil
- ⅓ teaspoon sugar
- 1 clove minced garlic (use more to taste)
- 1 green onion

7. Mix the bok choy with the sauce

8. Sprinkle some roasted sesame seeds on top, and enjoy!

Notes
For the freshest, crunchiest result use bok choy you’ve just bought. The leaf part will become too soft and soggy if the bok choy is left for a few days.
