A quick and simple way to add some protein to any meal is by throwing an egg on top. Not only are these overnight soy sauce eggs a perfect ramen topping, they are also such a flavorful addition to a simple bowl of rice, some noodles or any other meal that you’d want to add an egg to!

Ramen eggs are known to have a beautiful runny interior. But how do you achieve the perfect soft boiled yolk?
In order to make sure my eggs are boiled consistently over time, I put my eggs in a pot of water that is already boiling (instead of bringing the water to a boil while my eggs are in the pot). I prefer my ramen eggs to be soft boiled but not too runny, so I boil them for six minutes. If you’d prefer a more runny yolk, boil for only 5-5 ½ minutes.

The main trick is that after boiling the eggs, quickly submerge them in ice water. This will stop the eggs from cooking any further. Simply putting them in cold water may not stop the cooking straight away!

Here’s what you’ll need for this recipe:
- 4 eggs
- 1 ½ cup water
- ½ cup soy sauce
- ½ cup mirin
- 2 minced garlic cloves
- 1 teaspoon grated ginger
- Scallions
Let’s make these simple Soy Sauce Eggs:
1. Start with four eggs at room temperature. Make sure the eggs are at room temperature so that they don’t crack in the boiling water!

2. Bring a pot of water to a boil
3. Place the eggs in the water and boil for 6 minutes.

4. Quickly move the eggs into a bowl of ice water

5. While the eggs cool, place the following ingredients in a pot:

6. Bring the sauce to a boil then set aside to let it fully cool.
7. Peel the eggs

8. Place them into the sauce in a covered container (you can even use a ziploc bag!) and marinate overnight in the fridge


9. Add the eggs to a bowl of ramen, eat them with rice, or just eat them by themselves as a snack!

Tip: Once the eggs are ready, you can use the sauce to drizzle on rice or stir fry noodles with it. You can even try to use it to marinate meat! To reuse the sauce, just gently boil and put in another batch of eggs!
